Does this machine allow you to make cocktails? If so how is this done? Can I use syrup pouches?

This machine literally just crushes ice. What you choose to do with your crushed ice is up to you. We usually add a few drops of syrup to make a slushy or pour baileys over.

How cold is the slushie i.e is it cold enough to give you brain freeze as my drinks have to be really cold

It isn’t really a slushie machine - more of an ice crusher but it gets jammed really easily unless you bash the ice before putting it into the crusher. It doesn’t freeze the water.
