This pancake mix makes the most delicious pancakes. So easy. ¾ cup mix and ½ cup water makes 3 medium sized pancakes. I grease the pan with butter and I drop blueberries in while they are cooking. Only takes a few minutes and the result is great texture, great flavor. I've tried other Birch Bender's mixes, like the protein one and the paleo one and they are all good. The organic buttermilk mix is my favorite though. YUM

The pancakes are easy to make, just add water, mix, and cook in a skillet, or a griddle if you have one.The ingredients are healthier than most brands. There is not a lot of extra junk added.They taste great - add some real maple syrup or honey for some healthy cakes!

Directions indicate to mix 1-2 minutes. Did so (against my better judgement and knowledge that too much mixing makes for tough pancakes). Which is what happened. They were also too thick to pour. My suggestion is to mix until just incorporated, then straight to the pan.
