It reproduces the action of a butcher's steel and automatically ensures the correct edge angle is applied equally to both sides of the blade. The steels revolve under tension and do not wear away the blade. The base of all Chantry Knife Sharpeners has holes which allow the sharpener to be secured to a surface for even safer sharpening and to ensure it's easy to find in a busy kitchen.
