Auricchio Provolone is always made in the same way. Its typical and unmistakable flavor, was born from the Gennaro Auricchio’s “secret recipe”, who invented it in 1877. The moulding , that’s the most important phase of the manufacturing, is, really, handmoulding made by dairy experts. Auricchio Giovane is still today produced following the traditional ancient recipe of Provolone Auricchio. The short maturing makes it soft and delicate taste. The cheese is shaped and finished by hand. It’s also used as an ingredient in many dishes including Milanese breaded, grilled, tossed in mixed salads or in many authentic recipes. Auricchio giovane is also used as an original gift on special occasions both at Christmas and Easter, for its characteristic shape.
