A very nice book!
Book was a gift for someone who was very happy with it. Good looking book, plenty of quality pictures and very tasty looking recipes.

This is a good mixture of information about sausages and recipes using the different types. A good addition to our collection.

In sausages we trust
A really practical book on sausages and sausage making. Its practical advice is brilliant and the how to elements totally useful. Endless recipes, so much so that I have just bough 9lb of caul fat and frozen it in 1lb bags to give me plenty to play with. Realfaggots here I come. I find the format, the production values and the ease of explanation coupled with great recipes a winning formulae for me.

You must try Comberland ...
A month ago I went to England on what is beginning to look like a regular annual visit. While I was there last year I had a Cumberland sausage and asked for one during the month we spent at our favorite B & B last year and this year.. When I got home from the first trip, I looked for them everywhere. In the end a forward-thinking butcher at Whole Food told me that if I could get a recipe, he'd make them for me. When I was in London, I looked for a book of recipes for sausages that contained the Cumberland recipe. I went up and down Charing Cross Road to all of the book places and found this book, the only one that contained the recipe I was looking for. At 25 pounds (about $42) and I found that pricey. My husband said, "When we get home, we'll look for it on Amazon." Was I glad I did!! This book (described as used, but it certainly didn't look it) was less than $10. It has the recipe and I'll be taking it to the butcher. Perhaps other people will like it, too!!

I got this book because it has a recipe for merguez, which is a North African sausage from Morocco and Algeria. I've been after the recipe for merguez since I was a teenager. In France, Moroccans and Algerians have stands where they sell these spicy delightful sausages with French fries. I remember, every time we went to France and would take road trips to see relatives, every rest area would have stands where you could buy a plate of two merguez sausage with French fries. I would gobble them down. We had a close friend of the family who was friends with my two aunts who was a butcher, but he never gave me the recipe. Now I finally have it and can't wait to get out the old meat grinder and make my own merguez.
