Wonderful Starter
This starter is excellent. The review that states their starter became moldy was the buyer's fault, not the bakery's.Keep the sides of your jar wiped with a damp paper towel after each feeding. Keep a lid on your jar that's twisted to stay on but not twisted closed-your glass jar WILL explode if you do not allow the yeast gas to escape. A dish cloth covering your jar will make your starter moldy-the towel harbors bacteria and allows it to pass into the starter. Using tap water will kill your starter because of the chlorine, you need to use bottled water or boiled (and cooled) water. Wash your hands and mixing utensil before you mix your starter-be hygienic with your product. Don't use metal utensils to stir it, the yeast can react with the metal. Use plastic or silicone spatula. Scrape the sides of your jar into the starter after feeding it and then wipe the sides of the jar carefully. Mold will grow on the sides if left with smeared sourdough start. There's a lot to learn with Sourdough so just look for a FB Sourdough group. This is a great starter and I loved that this was already aged and took the guesswork from starting my own!

Amazing (AMAZING!!!)
I made sourdough baguettes with no other leavening but this sourdough FOUR DAYS after I activated it. I hardly believed it myself. They were gorgeous.I’ve never had a sourdough starter a fraction of this powerful, and I’ve tried >4 commercially available sourdough starters over the years.

This starter worked perfectly! I have a lovely, bubbly and fragrant starter after about a week. I followed the instructions it came with.

Time vs Feeding relation
It has been over a week and hardly shows any action. I will think that this stater woukd speed things up, but the additional starter I made from just flour and water has been showing better co2 activuty. I am so disappointed. Not sure if I got a bad batch. Oh well. It is what it is..
