Looks like pasta is back on the menu, boys.
Most of the criticism comes from two general complaints: texture and taste. On my first go-around, I felt the same. I was, of course, boiling it in tap water for 10 minutes like the directions said (with a little olive oil to prevent sticking). And guess what? I was not impressed.However - i paid way too much for these suckers to give up and toss. No, I was going to MacGuyer the S outta these babies to achieve maximum tastebud arousal. So I began furiously working in the kitchen, filling the whiteboard with equations and theories. After exhaustion and hunger finally took over, I unlocked the secret and I'm here to share it with you.Boil them in half chicken broth, half water. A *light* boil for 18-20 minutes. Do not salt the water. Add olive oil to prevent sticking. Remove them once cooked, put them into a collander and rinse them with hot water if immediately eating, cold water if going into a cool dish.Now, darkness, the tables have turned. Do with it whatever you like. I prefer pasta salad (chopped black olives, feta, red onions, cherry tomatoes, olive garden dressing). But Rao's vodka sauce never gets complaints.To assuage your concerns, this method does not make the noodles taste like chicken. It just makes them taste pretty, pretty, pretty good.And that's how I turned this product from a 2 star to a 5 star and made exactly zero dollars but did enjoy my dinner. Fin.

So much Yucky..
My other half is a type 1 diabetic so I make it a point to make meal that won’t cause his BS levels to spike and he isn’t playing the “too high-too low” game with his sensor all day. It’s so exhausting for him.. at his job he needs all the energy he can get. I was excited to try these as I’ve found it EXTREMELY difficult to find a decent alternative for pasta, it is one of his favorite foods that he can never truly enjoy without regret. I’ve tried numerous products and even went as far as attempting to make my own, all have lead to pure disappointment.. and this product was one the worst-if not the worst-of them all. The flavor was chalky.. like if I were to chew on chalk it would probably taste exactly like this stuff. It was so mushy my first attempt.. so i threw that out then tried to cook the rest of the bag which wasn’t AS mushy but still as dreadful to eat. “Al dente” (or in this case crunchy) or mush were pretty much my only options.. but the taste is the same no matter either way. This is a BIG NOPE- Carb-nada has been the closest thing to a decent pasta alternative weve found and I think I’m done looking as these products aren’t cheap, hard to find in store, and most buying online options are in bulks of 3-8 packs. Carb-nada isn’t perfect but it tastes great so I don’t have to mask the noodles with sauce and doesn’t turn to mush on me.Don’t waste your money.. i wish I didn’t.

Bad bag
I have ordered these low carb noodles 13 times in the past few years because I am on the keto diet and never had a problem. I eat them all the time. The last time I ordered these, they were a darker color in the bag, and had a really bad rubbery texture after boiling, from all the others I've ordered. I had to trash them. Unfortunately they are not eligible for return, so I am out around $30. Makes me weary to order again because I'm afraid they will be like the last bag and I don't want to waste my money again, being that they are so expensive.

From a 30 year low carb eater.
I was very confused re: the reviews I read for this product. I tried the low carb linguine. As to price: anything low carb is going to be expensive. That's just part of buying specialty items. As to taste: I didn't realize pasta had a taste. It picks up flavor from what you add to it. As for texture: I will agree it doesn't get to al dente. It was just really, really chewy! So, I'm just wondering why someone who isn't into low carb (low carbers would already know all these things), would even want to try it. There are many ways to lower calories and carbs with "regular" food. It takes time to get use to the taste and textures and if one isn't willing to give it time, then don't purchase. I will say that I thought, despite the really , really! chewy texture (I cooked in a large pot with plenty of water for 30 minutes), the taste was pleasing, the texture was fine and it was very filling! 2 oz pasta, 2 oz pork loin, and 1/4 cup Ragu Alfredo sauce made a very satisfying meal 260 calories, 12 g fat, 9.75 carbs, 18 g fiber and 25.5 grams protein. Fit perfectly into my low carb diet. If you want to do low carb, stick to it. Try many different things to allow for differences. (And know that's its gonna cost, but you'll eat less so it all works out).

Not my fav, but I figured out how to make them less chalky
So I got these because I loved that they were low carb and I was missing noodles and got tired of the palm hearts. I did not read the reviews though until after I had tried the one bag. They were barely edible, no taste at all, chalky and tough. So, I experimented with the next bag - I boiled it for 15 minutes in water, drained it, added almond milk and butter and then simmered for like 15 minutes. It was better tasting. I made mac and cheese with it and baked it. Not so bad. I then reheated them today for lunch with a bit of butter and they taste so much better, even good tasting! I believe letting them sit overnight in the fridge and then adding butter really added to the softness and taste.I do NOT want to have to let the noodles sit over night every time, but I may do that to my remaining two bags so I don't waste them. I doubt I will buy the 4 pack again. I will most likely be buying individual bags from here on out.UPDATE: These actually turn out good with some finessing. First, the elbows I used for mac and cheese. I light boiled for 10 minutes, then drained them. Then I added a cup of milk and 4 table spoons of butter and simmered for another 10 minutes. Then I added my cheese sauce and baked it. Turned out perfect! I saw where someone boiled the noodles in half chicken broth, half water. Definitely going to try that.
