Great Carbon Steel Skillets, With an Innovative - Space Saving - Detachable Handle
I started using Lodge carbon steel skillets a while ago. However, because of the detachable handles on the Oxo Outdoor skillets, I picked these up in the 8-inch and 10-inch versions hoping to save some storage space. I can say that I am delighted with my purchase so far. When handled, these skillets feel thinner and lighter than the Lodge Carbon Steel and have a much smoother cooking surface than the more pebbled surface in my Lodge Carbon Steel skillets. After washing the protective coating off the Oxo skillets, they were pretty much non-stick from day one. The 10" skillet is pretty flat but has just the slightest bit of a crown in the center. This crown is not a problem for me, but something to be aware of if you are the type of person that obsesses about having a perfectly flat skillet. Also, the handle could have been more ergonomic. Still, I don't notice the handle because I use a hot pad to handle the skillet anyway.These are probably too heavy for backpacking, but I recommend these skillets if you are a car camper, overlander, take canoe trips or just want to save storage space at home.

Excellent!
Great size. Heats evenly. Surface is pretty much nonstick. Good price point. Used it several times during our recent camping trips. Took it with me to a thrift shop to find a lid for it. Found one and now it’s perfecto!

Great Camp Pan
Bought this pan to replace some 15yr old teflon pans I had been using for camping trips. This pan was easy to cook on and easy to clean. On it's maiden cook I had a friend fry up some bacon and he literally started a grease fire in the pan, but clean up was a breeze and the pan was back to cooking eggs just fine within minutes. I especially like the removable handle which makes packing this pan with the rest of the cooking gear much easier.

I love this pan but...
OK, the tl;dr is the handle is a problem. I bought this for use in my small apartment thinking it would be perfect for storage since the handle can be removed. Also many of the other brands of carbon steel pans have extremely long handles that wouldn't work in my small space. On this pan, unfortunately, the handle wiggles anytime you touch it. Need to pick up or shake the pan, you can feel it wiggling in your hand. It's not a *real* problem but it is somehow extremely annoying. I will be buying the fixed handle version of this pan and moving this one to camping duty only.In every other way this is a great pan. The heat distributes well (though not as well as my heavy cast iron pan, of course) and I've seared burgers and steaks in this pan and they come out great. Heats up quickly (compared to the cast iron) and makes great eggs and omelettes. You still have to take care of it properly (scrub, rinse, dry, heat, heat with oil, wipe) but it's pretty standard if you're used to this kind of pan. Once you're used to it, it's no big deal. Takes to seasoning well. With a little oil in the pan it's essentially non-stick.

Excellent pans, I have the 8” and 10”. Would love to get an oven/campfire proof carbon steel lid to go with them so I can bake in them. e.g. upside down cakes and such.

Fantastic fry pan with one issue OXO! FIX THIS ISSUE
I love this pan. Heats even, very non stick from the factory even, I’m sure it will get better with use. The handle mechanism is very handy and lock is very robust. The main reason I chose this pan with the detachable handle isn’t for storage… it’s for the poor heat transfer in the joint! No need to have a silicone sleeve on this pan because the heat doesn’t make it into the handle.Let’s get to the only downside. The handle is VERY sharp. They didn’t even break the edges. I manufacture products in my garage, so I rounded it on my belt grinder. It’s honestly bad enough that If you don’t have access to a bench grinder, or metal file and don’t want to add a sleeve to it, I wouldn’t purchase this pan. I have tough working man hands and yes it is that sharp.Having said that I just ordered the larger one because I can fix it easily in a couple minutes and the upsides are worth it!

If you buy this, keep in mind, you treat it like an iron skillet.
I like the packable design (I got it for camping). The only thing I would recommend is for the company to make a small bend in the handle so it sets flat against the pan.

Surpassed expectation. Very non stick from day one. I keep it well seasoned and it’s very good.
