This is a professional quality 8" chefs knife and is made using Japanese steel with 67 layered Damascus . Ground to 12 degrees per side to ensure maximum efficiency, sharpness and very high edge retention. Prior to launch samples were continually used in a professional kitchen environment for 1 month to ensure quality and consistency - they passed with flying colours. This is NOT a toy and should always be used by a responsible adult. If looked after this knife will give years ofexcellent use. We recommend that this knife is NOT cleaned in a dishwasher
