I have made dozens of these kits for gifts and I prefer to use polyfill. It's easy to handle and gives a smooth, filled appearance, not the bulky look of cotton stuffing.

Q: Approximately how many hours does it take to assemble this stocking? Would a 10 year old be able to do any of it?

Between 40 to 60 hours . Depending on the skill level of the assembler. If the 10 year old is very skilled with embroidery and cutting skills then yes.
