Q: Why would I use 30 oz of water when I could use 16 oz of heavy cream and 12 oz of butter?

That's what my husband does !!! Makes it a more elegant, flavorful sauce with heavy cream and actually a little cognac !!! Great product, very, very good for any type sauce !!! My favorite !!!

Thank you for your interest in our products! This item lasts 24 months unopened, but can be used after that with no health safety issues just a possible compromise in the flavor profile

Q: How many cups of veal broth does once package make? Does package need to be refrigerated after opening if not using all of product at once?

It's hard to give a definitive answer because I didn't use it as broth; I used it as a base for gravy/sauce and also used a small amount to help season soup. After not using the whole package, I just put the opened package in a baggie and stored it in the cupboard it was fine. This stuff is expensive but there is no substitute if you are a gourmet cook!
