I tried to enjoy this pasta. With so many good reviews I thought I would. If you don't have pasta, it's a passable substitute - better than the rest I think. But it's a little too flavorless, mushy and structureless for me. I will not be buying this again.

The worst low carb noodle/pasta alternative I've tried yet
The only good thing I had to say about this was the concept. Besides that, nothing. It had potential straight out of the strainer. Although I knew (from reviews) that the flavor was going to be bland as heck and that the texture was going to be off-putting, I really had high hopes for this product. I figured that if I can put up with eating shirataki noodles - which I jokingly refer to as "chewy, tasteless rubber bands" - then I can give this a gander.Fresh out of the boiling water it wasn't offensive tasting or in texture. I used 1 serving with my spaghetti sauce. I noticed that my sauce got really watery & chalked it up to wondering if I hadn't let it strain long enough. The first few bites were manageable. I thought it soaked up some of the sauce (unlike shirataki noodles where the noodles basically swim in the sauce but not soak it up) & thought that was nice for a change because maybe it'll cover the blandness of the pasta so I can manage to overlook the strange texture. With each additional bite, the texture and flavore became worse and worse. I cooked it al dente because I knew it was going to be in my steaming sauce so it might continue to soften. With each fork full, the pasta started to crumble and that, along with the flavor began to resemble something like that of wet all purpose flour with a little bit of bite. The pasta crumbled in my mouth into something paste-like. And I'm not referring to how when foods are chewed, it gets mulched down with your saliva to ease the passage down your esophagus. It literally felt like the product was losing every last bit of moisture the more you chewed it. That was a rough serving of spaghetti to put down.I didn't want to be wasteful though so I gave it another chance after it sat drained for about a couple hours. When I put the sauce in it this time the same thing happened. It seemed to have pulled out whatever water was in the pasta and made my sauce very watery. The pasta was even more brittle and crumbled apart even faster. I could not stomach that serving and threw it away. I felt sad that I wasted my tasty sauce.It's too bad that I'm not allowed to return my unopened package (I bought 2). For the amount I spent on it, I'll probably try to think of another way to use it. Maybe blend the cooked pasta and use it as a thickener for a keto soup or something. Utterly disappointed! So far I've tried konjac/yam based noodles (shirataki), soybean fiber/yam based noodles (Healthy Noodles from Costco), zucchini noodles, kelp noodles and these. These are by far the worst. Disappointed that I can't return the unopened package. Maybe one day I'll find some sort of keto soup that I can pulverize it & use as a thickener of sorts.

Long review but worth the read.
I tried several brands of low carb pasta before finding this pasta from Low Carb Pasta Co. I have purchased this product numerous times and I have tried the penne & fettuccine - both great. I recently placed an order for 3 more bags of penne and when it was delivered I opened the bag and found 3 bags of penne that looked very different than the past bags of penne. The bags were in a clear plastic (different than the brown label shown) and the pasta looked very white, like plastic. Anyway, we cooked the pasta and it was beyond bad. I tried to return the unused bags of pasta but they are not returnable (food item). I called the company and I was amazed at their OUTSTANDING customer service. The gentleman that I spoke with explained to me that he bought the company over a year ago and was trying to reduce the number of retailers carrying their pasta because some of them were selling an older product that is no longer made. This gentleman sent me a replacement (I have already received) for all the pasta I bought and sent me an additional bag of pasta to try. We have tried both pastas and both of them were great - just like I had purchased several times previously. Great pasta and great customer service !!

I put it in the Instant Pot
We've tried them all...I prefer zoodles but the kids just really want a "pasta" sometimes. So we tried this. By far the closest in taste & texture. I have found that cooking about DOUBLE the time listed in the directions is required to obtain an al dente texture - otherwise, cooked as directed it remains hard & almost crumbles when you bite it. I successfully put the product in my Instant Pot tonight. Covered with barley enough water to cover the pasta & cooked on high for 11 minutes (noting that the directions on the package say to boil for 10 minutes and the IP usually cuts the cooking in half!) I then turned the IP on saute and threw in butter, gouda & cheddar until I had a beautiful, creamy keto mac&cheese! This is wonderful for me because I used to make quite a few "dump-and-go" pasta dishes in the IP & I will once again be able to do them.

Pretty Good Choice, Ok texture, Ok Price
Great Low Carb Bread Company Penne Pasta has a slightly gritty texture reminiscent to garbanzo bean pasta like Banza but noticeably more refined. They are a bit dense but it is resolved by finishing in a sauce or casserole. It does have a slightly beany taste, but it is not unpleasant. It is an ok low carb pasta option and would have been a higher tier product for me if I hadn't tried Carba-nada brand pasta. Carba-nada is so close to normal flour or semolina-based pasta that it has changed the judging threshold for me. This being said I would still buy this pasta for casseroles type dishes as the Carba-nada pasta only comes in a fettuccini noodle. This is still a good low carb pasta choice that I recommend to people that eat low-carb.

NOT Pasta it still really good
First and foremost, this is not real pasta. That being said, it’s the closest thing to it with barely any carbs that you’re going to find. When I first got the bag I was truly disappointed in the amount, it looked like there was hardly enough for 2 servings let alone 4. It takes about 30 minutes to really cook up but once it does, there is quite the difference in size and servings. I made a pasta bake with it (after about 30 minutes of boiling it) and ended up with closer to 6 full size servings, counting the meat added, than 4. It really is pretty good stuff, even if the cost is a bit daunting. If you are low carving it, this is a good occasional alternative to pasta. Highly recommended.
