Tom Yum - Preparation & cooking for best results (per set) : Put Two or Three litre of water into a saucepan & bring to the boil, add the galingale, lemongrass & kaffir leaves to the water & allow to gently boil - add two or three small chopped red onions or Mushroom or Potato or shallots cut into quarters, followed by your choice of chicken, pork or seafood cut into small pieces & allow to simmer. Once the meat is cooked, just add the chilli's a little lemon juice & fish sauce to suit your own taste, or you could try dried sour tamarind instead of lemon juice for an alternative delicious sour twist. Serve with hot rice & enjoy. Note: Recommend to add chilies later. Break the chillies pots and slightly add into the soup, keep tasting it until got the right level. and These dried herbs will give the exact scent of Tom Yam soup just like you get from the fresh herbs.
