It is a softy table cheese, blue-veined cheese made using pasteurized whole milk. It is in a 250 gr bowl. Gorgonzola is a raw paste cheese and its colour is straw-white. Its green streaks are due to the process of blue-veined and the grow of mold. It looks so soft and creamy with a distinctive flavour and unique, slightly spicy that sweet one. Very strong and decided that spicy because paste is more blue-veined, firm and crumbly. To have the most creaminess of the sweet gorgonzola, you have to remove it from the refrigerator at least half an hour before eating. Both products are made with pasteurized milk from located stalls in the area of origin. There is the addition of selected lactic acid bacteria and molds that give to Gorgonzola the characteristic veining. The seasoning has been continued for 50 days for the sweet one, and over 80 days for the spicy one.
