Skyr is an Icelandic cultured dairy product. It has the consistency of strained yogurt, but a milder flavor. Skyr is technically classified as cheese, although widely regarded as yogurt. It has been a part of Icelandic cuisine for centuries. This specific culture does not take rennet. Its microbial profile is the same as found in traditional skyr (they are the same culture, in fact!), but cultures with the mesophilic probiotics already present in traditional skyr.

A mild, creamy yogurt
It took 2 rounds of fermentation to get the yogurt to thicken. Very mild taste, thick and creamy.

Instructions?
I haven't used it yet, so I don't know if it's good. But all I got was a little packet with no instructions. I had to go to the Website to find out how to use it. This doesn't give a good first impression to a new customer.

I love, love, love this product! I am just really enjoying the experience of making my own yogurt. I'm on my third batch of homemade skyr. The flavor is phenomenal and the texture continues to improve with each batch. Plus, the online support and encouragement that you get from the seller is a welcome addition. I like that this seller has a Facebook group and is happy to answer any questions that you have as well as share in your triumphs.
