This silicone flan pan cake mould crucially has a raised lip right round the edge of the sponge to help stop fruits and filling literally slipping right off the top. For a tart case, pretty much any tart shell will do - but do check before buying a flan pan that the raised lip is there ! I've searched the web and found many flan pans listed online - but the crazy thing is that almost all of them are only fluted tart tins and NOT actual Flan pans !
