Q: Can you seal items like canned fresh salsa to be stored?

No, this is only for storage of dry items unless you are refrigerating the jar of food. Some people vacuum the salsa or even fresh greens before putting in the fridge to extend them. To put salsa on your shelf it must be water bath canned.

Q: Does the sealer stay sealed long term? Does it work with lids that come with mason jars or do you need special lids?

I have sealed jars using old used mason lids and they seal just fine. I check them and some seals fail eventually. I just reseal them. This is not as good as using my seal a meal device. It’s great, however, for resealing partially used jars. I don’t expect the jars to stay sealed long term. I bought it because it is small and I keep it in drawer in my kitchen.

Q: replacement parts. Is there a place I can get a replacement nozzle that connects to the machine and the clear tube? I love this sealer!!

You can probably fry tubing from a hardware store, take a piece of the old one to measure. I don’t know about the nozzle ( all nozzles are bout the same) you can probably get one from some those companies
