After reduction and partial caramelization of the must, from the sweet pedro Ximinez grape, it undergoes a slow process of acidification, matuartionand careful ageing for 25 years before achieving the required density and acidity. Very tasty vinegar-Silly bottle
This is one of the best balsamic vinegars I have tasted it is really thick so comes out like a nice syrup and you can drizzle over just about anything to add terrific flavour to any dishMy only complaint is that the bottle is tall and thin so very easy to knock over and if the contents were less syrupy I would have made a mess in my kitchen many many times but bad bottle design non withstanding I would definitely buy this one again

Exquisite Balsamic Vinegar
Love this Balsamic vinegar it's absolutely fantastic, I've bought cheap supermarket Balsamic vinegar and it's like a different product compared to this and okay it is expensive but you don't need an awful lot to lift your food into another dimension.I bought Odysea Balsamic Vinegar at the same time and this is also a very good Balsamic vinegar but it's a bit more tart than the PX which is much sweeter and refined.I would recommend buying both but the PX is by far more refined and much more subtle and brilliant with jamon and fresh tomatoes served with a good EV olive oil and nice bread. it really is fantastic, I'll definitely be buying again.

Excellent Balsamic Vinegar...
I am really surprised that there are very few reviews on this excellent Balsamic. I waited until now to review it now i have gone through 3/4 of the bottle. For me, this one is the best-tasting one i have eaten so far. I have sampled 2 or 3 of them now, and i have decided that this is the one for me. No more messing about with Balsamic vinegars. I know it is a bit more expensive but it is worth it. Buy it peoples' you will love it.!!!!!!
