No, using a snap swivel is absolutely OK, and will not impact the scanning. You can use it together with shock leader.

Yes. The Deeper constantly floats on the surface of water.

Q: Will this work through a kevlar canoe? If placed in a baggie of water on the floor?

Hardly it will. It could show you approximate depth, but no more than that. For best quality of readings, the sonar must be in the water.
