I am using it to project onto canvas for paintings. Is there a way to scale up or down gradually? similar to zoom?

The easiest way I've found is to change the distance of the projector from the surface you are using. You can then refocus for a sharp image.

Can you shrink an image?

Well, since the images projected are from images loaded from your computer, I guess you could do it either way. Positioning the projector close to the canvas/paper you will work on, or just use standard editors to shrink it on the computer to start with, and work from there

Can this projector put an image onto a smaller canvas such as 16x20? How small can the projection be?

I have it mounted about 27" high and am using it as a third monitor. It projects down to an area of about 18"X12". If I need to project something smaller I just reduce it in the computer application to a smaller size. It is nice to work with set up like this.

I haven't seen a table mount for this. Has anyone used it in a looking-down position - like over your head on to a canvas/drawing paper; if so how?

It will work if your tripod will allow you to rotate the Artograph so it is pointing straight down at the work surface.
