Q: will it work with embroidered patches?

If you mean using it to apply an embroidered patch, yes it will, provided that the patch has some sort of iron-on adhesive on the back, like Stitch Witch.

Q: Can you attach a bigger cushion plate of a different brand to this machine? Would I need a bigger one ?

Maybe if the holes lined up but I'm not sure how the outcome of your product would be as the size fits perfectly with the heat plate, it may not press evenly if the fit was mismatched.

Q: Is there any way to calibrate the thermostat, this one is about 60 degrees F too hot.

I did not notice the heat being too hot and was getting perfect adhesion but I did not use a thermometer to check mine.

Q: Is the press coming with an uk plug? Can it be switch to 220v?

No it does not come with an uk plug. I don't know if it can be switch to 220v.
