Banza's pasta is made from over 90% chickpeas. For the rest of their pasta, they use non-GMO tapioca, pea protein, and xanthan gum, which help bind the chickpea flour together as a vegan egg replacement of sorts. What is xanthan gum? Xanthan gum is produced by the fermentation of a sugar (glucose), much like the way yogurt is made. In their case, it's a non-GMO ingredient that adds volume; it’s in many of Banza's favorite sauces, for instance. Banza's xanthan gum is derived from corn. There are no corn proteins in xanthan gum, and the ingredient itself is a very small percentage of the product. That said, if you have an allergy to corn, they advise checking with your doctor before eating Banza. Do the serving sizes on Banza's nutrition label reflect cooked or uncooked pasta? The serving sizes reflect uncooked pasta. When you cook Banza, it almost doubles in size and weight, taking on the water it’s boiled in. That said, the nutritional content still reflects that of the dry pasta you measured before cooking. Where does the sugar in Banza pasta come from? Banza pasta is made from over 90% chickpeas. The sugar in Banza is naturally occurring in the chickpeas - there is no added sugar. What is the phosphorus and potassium content of Banza pasta? Is Banza pasta organic? No. While their pasta is certified non-GMO, they are not currently pursuing organic certification. Suggested Use: Bring at least 8 cups salted water to a rolling boil. Add Banza, and stir immediately. Cook to desired firmness, stirring occasionally. Approximately 9-11 minutes.
