From my wife, the baker: for those excited about exploring French pastry, this book is amazing. It’s like having an expert guide you along with all of the photos, tips and step-by-step instructions. I’ve baked two sweets from the book so far, the first being the sable cookies on page 42. It’s a straight forward recipe that yields a patisserie quality cookie. I swapped chocolate chips for a bit of vanilla paste and almond extract but the possibilities are infinite (zest, nuts, dried fruit, etc). The kids LOVED them. Next I made the chouquettes. Another great recipe with insightful tips that I have not seen in other French pastry books (the scoring tip). I highly recommend this book!

We are so proud of ourselves!
My 11 year old daughter and I made a lemon meringue tart and chocolate eclairs from scratch!The book is laid out in 14 lessons to build your skills in French technique with later lessons being full recipes for decadent pastries. There are many process photos to assure your textures are correct as you work!We learned so much in our first attempts at French baking and are now going to complete the whole book, one lesson at a time, as part of our homeschool program!

Fun and clever
Cool book full of advices from the makers of cookies we love. Book is playful, recipes are versatile and I want to try them all! So far did the choux dough for cream puffs. These were by far the best I’ve ever made, with a trick on the classic recipe I had never tried. Crunchy on the outside and melty inside. Better than some I’ve had in French pastry shops and inexpensive to make. Looking forward to trying the rest of the recipes.

Baked goods from chez mamas (that’s me)
So I’m not a cake baker but I really wanted to learn tartes and other pastries. I like that they give different recipes for the pastry doughs. The croissants were delicious and so was the strawberry cream tart. I made cheese danishes, chocolate croissants, plain croissants, and strawberry tartes. They even looked like they came from a pâtisserie or almost. Great book.

I will still need help!
Not for the absolute beginner. There are many instances substitutes are suggested but not clear how to incorporate them and still maintain balance of the ingredients.

Excellent Companion to lean French Pastry Baking
Really helpful guide as I learn the French pastry recipes and ways in baking. Good advice provided in what to avoid or how to achieve the best results.

Making French Patisserie Seem Do-able
This fun book is clear and offers many helpful tips to help a novice succeed. I borrowed a library copy and found it so helpful that I quickly bought my own copy. Try it-you will be glad!

Great step-by-step recipes!
Each step of each type of French baking is fully explained. The recipes are easy to follow with easy-to-find ingredients. All the recipes I have made have turned out perfectly.I wish there was one like this on French bread baking!
