A somewhat flimsy 40 mesh sieve
Product: Scandicrafts Stainless Steel 10.25 Inch Fine Mesh Flour (40 mesh)Rating: 2.5 of 5 (average).I recently brought a grain mill attachment (GMA) for my Kitchenaid Stand Mixer, and also one of these in the same shipping box. Due to inept packing, the GMA bounced around and squished the sieve, which arrived bent (that's Amazon's fault, not Sandicrafts). Anyway, since the screen was undamaged, I manually unbent the ring and kept it, rather than returning it.LIKES:* None.NITS:* PRODUCT DESCRIPTION LACKS MESH SIZE (-1/2 star): I have no idea why, but the product description fails to mention that this is a 40 MESH SIEVE, which roughly corresponds to fine cornmeal. IMO, 40 is minimally adequate for removing medium and large sized bran fragments from home ground flour, but if you want to obtain the finest flour your grinder can manage, you'll need try upgrading from a 40 mesh to an extra-fine 50 or 60 mesh, and see how much extra material it captures. For those who are curious, after 1 grind of hard wheat berries on my Kitchenaid GMA's coarsest setting (1/12) and 2 grinds on the finest setting (12/12), the 40 mesh sieve captured about 16% by weight - presumably mostly bran and diminishing percentages of germ and larger particles of endosperm.* FLIMSY (-1 star): This sieve is disappointingly flimsy, and arrived bent. I wish they'd used a slightly heavier gauge of stainless steel for the body, a stronger rolled lip, a reinforcing ridge in the middle, and perhaps even a pair of bracing rods across the top. Any or all would have done wonders for making this a more durable and higher quality product.* HANGING RING (-1/2 star): For those who care and use them, this sieve does indeed have a hang ring (even though you can't tell from the current product photo). However, I've found it more of an annoyance than a benefit because there's no clip to secure it, and therefore it rattles when you shake the sieve. Also, call me a snobby purist, but I only hang items in my kitchen that perform brilliantly, are used regularly, and that I'm proud to showcase, and this tool earns none of those accolades, and therefore the ring is somewhat superfluous.* MISC (no stars): Rather than just different diameters, I wish the manufacturer offered a choice of different mesh sizes, which is arguably of equal or greater importance than diameter. No points for intelligence, but no penalty either - mediocrity is simply par for the course.BOTTOM LINE: This sieve is at best merely adequate. The mesh size is only middling fine, the body is flimsy and easily bent, and the hang ring rattles annoyingly during use. If this has the size and mesh to fit your needs, and you don't see higher quality options, then this item is certainly a competitively priced stand in until you can find something better. Recommended, but with reservations. I've only had mine for 2 weeks, and I'm already looking to upgrade.

DONT BUY!!!
Please don't waste your money of this. You can put a few more dollars with it and save in the long run. I have only used mine 2 times and when I went to pick it up from the hand towel it rested on, it caught the screen in it and made a really big hole. This was done with very little force. I give this a 3 stars because I've only used it 2 times and if my husband wasn't able to glued it back down I would have given 2 stars. It bends very easily and not sturdy at all. Please don't waste your money... if you only need it a couple times, then it will stand up perfect for you. But if you are gonna be using a lot it's not good quality.

Meh. Probably can find better.
This seems like a piece of junk. It indeed sifts flour. However, in the initial process of gently trying to wash off the stupidly adhesive label, it became bent in about 11 places. It’s incredibly thin. Also it doesn’t fit in any bowls I own which is a major pain in the butt. I’m not sure if there are better options out there but this is meh.

Great for sifting flour but might be too big for home baking.
Just got mine today and m very happy about it! The frame is not flimsy for me. I actually tried bending it but it's as strong as a baking pan. I used it for baking at home and it's really good for sifting flour. However, I find it too big for sifting ingredients for only single or double cake recipes. I am not a professional baker and only bakes at home once in a while. I did not realize that 10" is too big for sifting only a few cups of flour and sugar. I have to move it more gently or the flour gets all over the place. I think a smaller sifter - maybe 8 or 7 inches would be less messy when sifting flour.

High Extraction Flour, Here I Come!
I grind my own wheat berries when I need flour, and I find that my cakes have been really dense using straight up ground soft wheat. I have been trying to use a regular sifter to separate the bran out of the flour I would use for cakes but I had to make three or four passes before I even got close to getting most of the bran out.Luckily, this fine mesh sifter is fantastic! One go through and the bran is almost completely out. If you are really feeling perfectionist-ish, you could go for one more round of sifting and you'd be left with very little bran in your flour.I am very happy with this sifter.

I like this strainer.
It is a fine mesh, more than a mesh strainer. I know this is for wheat, but I use like a second level mesh strainer. In other reviews they said it breaks, so I have been very gentle with it, and have had no problems. Probably the mesh wears out, and breaks after lots of use. But I havn't had a problem with it yet. Given the amount of use, I suspect it will wear out in time, and I will likely buy another one just like it for the commercial kitchen.

nice product.
exactly as it should be. seems pretty solid and is just as good as some of the others we have at our restaurant. i have heard some people say that it is flimsy and the like, but this is made for sifting flour and other powders. it is not made to be banged and beaten on. i have also used it to sift cracker batter and it holds up fine.if you are abusing it of course it will break. but i assume you are just clumsy or don't know what you are doing. play nice with this item and it will serve you well.

Great for rinsing quinoa!
I have not used this product for flour but bought it to rinse quinoa. I had been searching in stores for something with a fine enough mesh to rinse quinoa without it getting stuck in the spaces and was unable to find anything. This product works very well for that purpose and the seeds do not get stuck in the mesh.
