You need to soak them overnight in cold water in the fridge and remove the hard stalks before using them. I put them in a delicious cantonese chicken soup. They are a bit pricey, but seeing as they are top quality, they are worth it as a treat when you get tired of the tasteless store bought mushrooms. They seriously make a difference to the soup, if you're looking to impress someone with your cooking get these!
