Q: Does this work for electroplating?

Yes - It worked for me. I was able to use it for electroplating with copper.

Q: If I paint the outside of a box with multiple coats of this, will it work as a faraday cage?

Not very well, as it is carbon it has resistance to it, the thicker you paint it on the more resistance you'll get between two points. Look for the silver based conductive paint instead.

Q: What solvent can I use to thin thin, clean-up, and strip this paint? I don't immediately recognize the smell of what's in it... maybe xylene?

This product is used shield cavities of a guitar or other electrical circuits so they don’t squeal or short out Not sure why you would need to thin this paint or remove it

Q: Can you use this to repair a full defogger grid?

Don't know if this would stick to glass very well, but for two dollars more you can get a product that's made for defogger grids. https://www.amazon.com/Permatex-09117-Complete-Window-Defogger/dp/B000ALBZJY
