As other reviews have mentioned, the product I received was literally half back. Once I trimmed off the fat I didn't have much meat left. I wound up using it to make pork sausage, and sliced thin for a Chinese stir fry, but I could have bought ground sausage a lot cheaper. If you want more fat than me, don't buy this.

I love me some pork butt steak, the meat is so tender and so good. Best cut, greatest texture, Butt small pieces
These were really great cuts that tasted great! But I had to cook the 2 that I bought, in order to make a decent cooking session in my crockpot. I know it’s an earth friendly piece, but if I can’t afford to buy another 2 for a single dinner, it might be okay if a cheaper piggy was proud enough to be more than 1 meal.

You really can’t go wrong with Nieman ranch products. I also feel great that I buying a product where the animals are raised humanely. And even ranch has an excellent reputation for this.
