Very well made knife
This year my daughter moved home, bringing with her a couple of dozen knives. She is a chef and has spent a lot of time selecting her knives one at a time. She has several high quality Asian knives, mostly specialty. When I first saw Damascus knives I became interested because they remind me of mokume gane. In fact, similar processes are used to make them. It is technically challenging, really an art. I do not think I have seen a bad Damascus knife. This, however, is the best of what we have between us. We looked at them side by side today and thought this was close to another knife we have, but of the two, it is the more well balanced, feels better in hand.I guess that I already indicated that the Utaki knife is well balanced. It also has a very nice shape for a general purpose chef knife. It can be used with a rocker motion which many people prefer.The knife is made with very high quality steel and tempered for hardness. The blade is finely honed and very sharp. It should hold the edge well because of the quality of steel used. It is also full tang and has a nicely finished wood handle. It is pleasant and easy to use. I have a lot of knives as well, not as carefully chosen as my daughter's. {I am not a chef} but do like good knives. Back when I got myself a set of Wusthof to replace the assortment of hand me downs, things left behind by room mates, and the idiosyncratic assortment I had purchased (most special purpose). As soon as I picked this up I said it is what I would be using. It is replacing the Wusthof chef's knife in my knife block.

Bait and switch, this is not VG-10 or AUS10.
I ordered a VG-10 kitchen knife, which is a premium grade, Japanese steel. That isn't what I received. The knife I received is Chinese 10Cr15MoV steel. Despite claims that this steel is equivalent, it does not have the edge resistance of VG-10, not even close.I dig the G-10 handle, but that's pretty much all this knife has going for it aside from the fancy packaging it arrived in. I gave this knife a go on some carrots and potatoes, which revealed this fatal flaw - this knife is a fatty. It looks nice, feels sharp, but the blade is too fat to work properly as a good kitchen knife.You can find much better knives than this from reputable brands and at a lower price. Blatantly deceptive bait and switch marketing tactic. 1-star.

Nope!
We used this a few times and the blade was wobbly. I wash my knives by hand and nothing goes through the dishwasher.While this came in a pretty box, it is just not what it's advertised to be as a well-balanced chef knife. This is not a premium knife, and it is not the steel it claims to be made out of.Hard pass.

Excellent Knife, Great Steel!
This comes sharp and works fantastically right out of the box. Top rate. It looks fabulous too. No negatives, issues or concerns at all. Excellent steel, and great quality on the handle. Cuts well, and ergonomic. Fun to use. Great value for the money, and an excellent gift for the right person. Nice craftsmanship, with attention to detail. Highly recommend it. Should be 6 stars!

$50 IS HEFTY for a paring knife . . . but this knife is worth every penny!
I am getting older and am FINALLY seeing that you do get what you pay for in this world. That being said, I am sick of cheap cutlery that doesn't hold up over time. So far, I am thrilled with this knife. Very good quality, SUPER sharp, nice grip, and on and on. The only drawback is the cost. I wish they sold a set so I could get six or eight of em in different sizes @ a discount. I just bought a few others in various sizes to update my kitchen. SIDE NOTE - This item is excellent for any types of zombie attacks or cutting mangoes on a deserted island.

Beautiful knife, performs well
I've been using this knife for several weeks now and I'm very happy with the performance. Aside from being beautiful, it has a nice weight to it and is very comfortable in hand, and it slices through vegetables effortlessly. I can slice tomatoes razor thin,....no problem. It has kept a sharp edge through quite a bit of kitchen prep and I've yet to sharpen it. I make sure that I wash it and dry it immediately when I'm finished with it. I should think this knife would last a lifetime if cared for properly.It would make a wonderful gift.- Recommended.
