These were billed as fresh, but they arrived preserved in vinegar. My plans to make a lacto-fermented sauce went out the window, so I switched to a more traditional Jamacian hot sauce with vinegar.The sauce turned out really good. Nice and hot, and a beautiful deep red color.I recommend it.
