This is the Masahiro G series MG-605 Deba traditional Japanese sushi chef knife made in Seki Japan. The Deba is the choice fish knife for the sushi chef, but many also use it for poultry and vegetables as well. The knife is sharpened on one side to form a single bevel edge with a slightly concave flat grind on the opposite side for a more precise and uniform cutting edge. The 150mm blade (about 5 3/4") is made of Masahiro Stainless Steel alloy MBS-26 Chrome-Molybdenum and Vanadium Stainless steel with stabilized black Stamina wood handle. This series was awarded "Good Design" by Japan's M.I.T.I. The knife comes in original gift box.

I’m ambidextrous, so if I had a complaint it would be that I have to use this knife as a righty

Not for cutting fish bones.
Knife is sharp and hold it’s edge when cutting soft item. But will not hold edge when cutting fish bones. Not a true deba knife. Spend more for a higher quality deba. My Salad Master knife had to finish the job.
