This is a very nice spice blend, one of my favorites from Zamori, and this is a repeat purchase. I use it often even in simple cooking as when I am going to sauté a few vegetables in a fry pan.

a new variation on curry powder
....Use it when you want something a little less tumeric-bright. One stop spicing if you're making a tanjine too. All the moroccan spices I ordered were surprisingly different from each other. So feel free to experiment.

A vegetarian's delight
I have used this in a tagine, as well as to spice soups, sauces and even sauteed vegetables. What makes this special to me - aside from the flavor it imparts - is the spices in this blend are fresh and highly aromatic. As soon as you open the jar you know that you are in for a treat.Another thing I love is the way the spices are blended into this mix. The proportions are perfect to my taste. Plus, the only source I have found for this ahtriya is this brand.One thing struck me the first time I used this spice: the way the ginger and rosemary contrasted, yet added a wonderful foundation for the other spices in the mix.When I mentioned that I use this in sauces, two ways I love this is to add a little to a red pasta sauce before serving, as well as to mix some into a caponata for dipping bread. This spice totally changes the flavor profile for each. This is also an excellent spice to sprinkle on fried eggplant, and is perfect in Mediterranean style lentil soup.For tagine cooking a favorite recipe is to cook a carrot and garbanzo dish using those ingredients plus chapped onion and garlic, a little chopped flat leaf parsley, dried apricots and a touch of honey. This spice manages to harmonize the flavors and aroma of the ingredients as it slow cooks in the tagine.
