Yes you can, and I do use this . Though per ounce, this is much more more rigid/tough than Knox gel due to its bloom being 300 and knox being 225. Knox gel is 225 bloom SuperClear is 300 bloom Formula for conversion for equal rigidity gel: WeightA * BloomA = WeightB * BloomB Since you use 13 ounces knox per 1 gallon of water for ballistics gel... the math for SuperClear ounces is per gallon is: 13 * 225 = SuperClearWeight * 300 SuperClearWeight = (13 * 225) / 300 SuperClearWeight = 9.75 oz Round to 10oz SuperClear per Gallon of water. Erroring on the side of caution, use 10 ounces. It might be very slightly tougher than knox using 10, but 9.75 oz is hard to work with compared to 10 oz. So use 10 oz SuperClear Gel per 1 Gallon of Water (sometimes I've used 11, but you lose clarity) I make mine with the 10z of Gelatin to 1 Gallon of warm (not hot) water (you use 10 as this is a higher bloom/density than Knox brand gelatin). I tested with a chronographed BB gun to verify it has near identical properties to FBI standard gel made with Knox gelatin. See my pictures where I test fragmenting qnd frangible ammo.

Q: I need to use the gelatin to seal fruits on top of fruit tarts? will this work? and also taste good with sweets?

SuperClear Gelatin will work perfectly on your fruit tarts. This creates a firmer set, so you do not need as much as with general purpose culinary gelatin found in the supermarket, approximately 1.5-2 teaspoons per 1/2 cup liquid (1/4c cold & 1/4 cup boiling). It is not a flavored gelatin. To add a bit of sweetness, you can mix 1 tablespoon of honey into the liquid gelatin solution.
