I used with a camera with poe and work

I generally would never suggest direct burying CAT5/6 cable. This piece would not be your issue but the possible damage to other parts of the cable would be where it failed. If you run an buried conduit then having this inside it wouldn't be a huge issue, but at that point running a single cable without this coupler would be better.

Q: Does this work with CAT8 ether cables?

If your Cat8 cable is terminated with an RJ45, then it will physically fit however I do not know the max speed that this coupler supports. Cat8 is designed for 2GHz (40Gbps) which may be too fast for the coupler. Check with the vendor.
