Koon ChunSauce, Plum, 5 Pound

I make a lot of Chinese recipes and I use a lot of this ingredient and it’s hard to find large containers of this ingredient in stores…even in Chinese grocery stores. Since I have to order on line I have to pay a premium for this but I won’t buy smaller jars.

Our favorite Dim Sum (seafood cove #2 in Westminster, ca/little Saigon) serves this with their fried wonton with shrimp. I thought they made it in house its so good. I asked, and they brought out this big industrial can.hahaha wow. It's sweet, but can but cut with a little vinegar, and salted with a little soy. Depending on your food, you can also add a little grated ginger into this for an even more insane dipping sauce. I made short ribs with a 5-spice rub, little salt, smoked them 2 hours @ 150, then covered with this plumb sauce slathered all over & some liquid 3 hours @250k in the oven, then finished more plumb sauce with fresh chopped green onions finished on the grill to caramelize. WTF I can win a contest with this stuff.

I thought it was a dipping plum sauce, but the ginger taste was too strong. Did I misunderstood the purpose of this sauce? Anyway, I ended up using it as a condiment for cooking when I needed some sweetness and ginger flavor.
