Harmony House Premium Dehydrated Shallots (8 oz, Quart Size Jar)

Our go-to vinaigrette salad dressing calls for fresh shallots.When I make it fresh for a dinner party, I use fresh shallots, garlic & lemon juice, but I also make a triple recipe and keep it in the fridge for our dinners at home every night.I worry about perishability of using fresh shallots, lemon juice and garlic in large batches of dressing, so I use dried ingredients instead. These dried shallots work extremely well.I don't rehydrate them ahead of time as they rehydrate in the vinegar and oil of the dressing. I also use freeze-dried garlic and bottled lemon juice in the dressing because of the same concerns about perishability.I use a Japanese mortar-and-pestle to crush and break up the larger shallot and garlic pieces before adding to the oil & vinegar.Is it as good as using fresh? Ummm, I'd say it lacks a bit on the freshness factor, but I just up the amount of lemon juice I use and that adds the zing that's missing.For us, it's a worthwhile compromise for having our favorite dressing at hand without having to make a fresh batch every several days.

Flavor is better than I hoped for. Fresh shallots have become so expensive I wanted to try hydrated. They are Fabulous

I hope they replenish their stock. This smells so good when cooking and adds a nice flavor to the recipes I use it in. I’m not even half way out and I just came back to buy another container just now. But they don’t have it. I’ll be back(in my terminator voice) lol.

Very delicious dehydrated shallots. Huge container, very good value. I add it to eggs, salads, anything for a great added taste. Highly recommend.

I thought this would be way too many shallots... How often do I use shallots? Rarely. But I thought I might use them more if they were like this. And I do! I used almost half of these in a month! Great in marinades or edamame, grilled chicken, tofu, on a bagel with cream cheese.... Endless! And so convenient.

Got my first bottle and it wont be my last. This stuff is very versatile and in my opinion, the easiest shallots around, since you dont need a trip to the grocery store, don't need to store them in a location fully hydrated, you dont need to clean/peel/mince them, and hydrates real fast. The color also gives you a sense of confidence in quality/taste. Already looking for my next bottle after 50% usage, so I always have it on standby and will check out the other items from the same company!
