So we literally threw out all the crap and bought organic INGREDIENTS
When serious illness hit our family because of ignorant food choices (organic junk food is still junk food) and needed to reverse the illnesses we went on a Whole Food (no Processed Foods) Plant Based Diet with and emphasis on starch. So we literally threw out all the crap and bought organic INGREDIENTS, emphasis on ingredients from the bulk food isle. Its hard to maintain a healthy diet on rabbit food. Starch is king in our house. Since we are also trying to loose weight, no flour, nuts, seed, avocados, and most of all, NO OIL. With little to no salt or sugar. Once the Doug Lyle Pleasure Trap has been reset, its easy to do.So the next thing to do is find the tools to make food easy as heating up processed foods. The Instant Pot is it. We own the mini for traveling (3 quart), the 6 quart is our main appliance and for soups, and we eat a lot of bean soups, you NEED the 8 Quart Instant Pot or you will get boil over issues.Next is to find a cook who follows Dr. John McDougall, Dr. Michael Klaper, Dr. Furhman, Dr. Caldwell Esselstyn, Dr. Dean Ornish, Dr. Collin Campbell and Dr. Michael Greggor's diets. Hence, that leads us to over 100 Vegan Instant Pot cookbook authors. Chef AJ, Jill McKeever Jill Nussinow (highly recommend) and Cathy Hestor are the books that make it easy, enhance the flavors, and adhere to the above mentioned MDs dietary guidelines to reverse dietary illnesses and maintain optimal health.The focus is on making ingredients into to meals as easy as microwave crap.I especially like this book because of the flavors. And don't forget to subscribe to her youtube channel.... I wonder if Jill needs to put a hair net on those ears???? Hummm....

Woot, Woot!!
I love Jill’s recipes. I have tried so many that are right down awesome, that I just write her recipes in my cookbook knowing they will be good, prior to testing them. We made one recipe once a week we liked it so much, and that is not usual for us. I like variety, but this recipe, Instant Pot Southwestern Hominy Stew is just fabulous! ( I add 1 bunch of cilantro stems, not leaves, chopped finely and I put 1 tablespoon of maple syrup in the bowl when serving). It is better the 2nd day even. We made her barbecue cabbage sandwiches and these were just terrific. Who knew? We made the Austin Curly Stew last night and it was so easy and a huge hit. My husband said to triple it next time. You can’t go wrong with Jill’s recipes. They are winners, like she is. There are more that are terrific, but I would be just repetitive. Get the book. It is a great plant-based cookbook.

Family friendly
While I was hesitant to fork out this much dough for a cookbook, I ultimately decided it was a good investment for a few reasons. I like to watch all of Jill's YouTube videos, but the recipes don't transfer to my menu planner app. Since I no longer have a system for written recipes, this was a tiny little annoyance for recipes I wanted to try and we liked. Secondly, I freaking love my InstantPot, and love trying new recipes in it. Thirdly, being vegan, having recipes at my fingertips that are both fast and delicious (and voluminous) for the teens in my family is very important. I also figured a purchase of this book would increase the likelihood of more vegan pressure cooking books being produced.Another thing I like about this (and all of Jill's recipes) is that her recipes are family friendly for those of with us more traditional palettes. Since becoming vegan we are eating a lot more ethnic food which we do enjoy, but coming back to old-style meals is a treat and a pleasure for us. Jill gives us that.Something else that should be mentioned is that her recipes are low in fat for the most part which is very important from a dietary standpoint.I can't think of any recipe in this book that we haven't liked even if it sounded a little strange looking at it. I think anyone vegan who wants fast easy tasty family meals would like these recipes.

Some nice recipes, but not quite what I expected
I bought the book because, as a vegetarian, I'm always looking for Instant Pot recipes that are quick, with easy-to-find ingredients, and are heart and lifestyle healthy.However, though the book promises that it uses items you can find right in your pantry, that's really only true if you first go out and shop for some items that are not so easy to find unless you're willing (at least in my location, which is very rural) to hit every supermarket in driving distance. Some of the spices required, for instance, are not found in our main supermarket. I happen to love smoked paprika, for one example that is used in the book, but haven't been able to find it locally in quite a while. Plus, even though I've been a vegetarian for over forty years, I had never even heard of "soy curls." There are a number of items I'll have to order online if I want to follow the recipes exactly. I suspect I will be substituting ingredients a lot instead.My main surprise, though, was in discovering that this really isn't a specifically "Instant Pot" cook book. The reason I say this is that many the recipes, though they are cooked in the Instant Pot, just use it on the Saute function and don't take advantage of the pressure cooking features. They could as easily be made on the stovetop. I also saw some that used some of the Instant Pot functions to prepare the dish, but then had to be finished in a standard oven. Others are actually slow cooker recipes, which is fine, since Instant Pots have a slow-cook feature, but they aren't actually "Instant Pot" recipes. I suppose, since the device has all of these functions, and the recipes can be made in the Instant Pot, we can give the book enough leeway to call it an "Instant Pot cook book." It just wasn't what I thought I was buying.After reading through all the recipes, though, I find a number that we will probably use, and which look to be pretty tasty. The combination of ingredients (the ones I'll be able to find ... and there are enough of those to get a decent amount of use out of the book, to be fair) look like they will work well together, and the preparation of most of the recipes appears to have been given a lot of thought and work to get things right. None of them are really difficult to prepare, as far as I can tell, even though many don't really put the Instant Pot to its best use. I will probably be substituting a lot, for ingredients I can't find locally, and I might even be brave enough to order a package of "soy curls" from Amazon to give them a try.So, I'm giving the review four stars, because, though it's going to take some tweaking, I think the book will provide enough variety that my family isn't moaning, "Not Again!" when they see me haul out my favorite Magic Cauldron.
