If I was left on an island with one knife choice it would be a pairing knife. You could really do it all. Especially smaller hands and wrists it works out better for me. I use this one a lot. No issues.

I have a paring knife, used daily for a few months, still sharp and very useful. For most people this is just as good as a two hundred dollar brand-name knife. It's too bad they don't finish the handles properly.

My paring knife was over 40 years old, part of the Cutco set we received as a wedding gift. I expected to last forever. Forever came too soon, part of an accident involving the garbage disposal, a chisel, and a 15-year-old 'helper.' The rip broke off and I nearly cried. We are on social security which purs a replacement Cutco out of our range. The Hammer Stahl is not cheap but is moderately prices. I was surprised when it arrived , packaged so well. The biggest surprise was the way it felt in my hand. It could have been made for my hand OR for my husband's much larger hand. The real test came when I peeled a thin-skinned Macintosh apple. One beautiful thin curl from each of half a dozen apples. I love the new knife. Thank you, Hammer Stahl.
