It's all in the texture and consistency of the dough mix (Recipe Added 5/11/21)
It's true that there aren't any recipes that come with the machine, nor could I find any on the internet.That's a big drawback. It needs to include better directions and pasta recipes specific to this machine.The booklet has some tips for the best results, but the "sand-like" consistency they claim will work is just too dry.I spent several hours, trying different things. When the dough was too wet, and clumped up, I put it in a blender to powder it before adding any water or more flower. After doing this about three times, and carefully adding a bit of water or flower and a little olive oil and re-kneading it in the machine. It finally started cranking out noodles.The consistency is much different than the dough of handmade noodles. Those you roll out and cut: the dough is much wetter.When the kneaded dough looks like course cornmeal and sticks together when pinched, that's what you want.I was looking forward to using this machine, and was disappointed with my first attempts. The dough that was too dry pushed out dry flour and then clogged up so the machine shut down. The dough that was too wet started to extrude noodles but only about a half inch emerged before the machine got clogged and the machine shut down.I made a huge mess reworking the dough, but once I got it right, the results were great. Now that I know how the machine works and what to avoid, I love it. It does take considerable patience and practice to get started. I finally got mine to extrude after adding some olive oil and a couple more teaspoons of water. the dough has to be a specific consistency, and that isn't easy to glean from the booklet.BASIC PASTA recipe - Yield: 6 servings:Ingredients:2 Cup Flour1 Teaspoon Salt2 Egg, well beaten.2 Tablespoon Oil4 Tablespoons Water• Select and install the desired noodle template; it snaps in and out very stiffly - you must use some force – I was afraid it would break.• Combine all the dry ingredients in a medium sized bowl.• Dump the mixture into the machine's kneading chamber (the lid snaps off and on very tightly - with hands on both sides of the machine and using both thumbs under the lid latch, push the lock tab up with some force – again, I was afraid it would break).• In a bowl or blender, beat the liquid ingredients together until well emulsified.• VERY SLOWLY add the liquid and let the machine knead the mixture until the mixture looks like very course cornmeal. Restart the kneading operation as needed.• If the dough is too dry, the machine will stop. Carefully add additional liquid in increments of 1 tablespoon during each kneading operation.• If the dough is too wet, it will start sticking to the sides of the bin and the paddles and won't extrude. Slowly add some more flour a tablespoon at a time during the kneading process.• Let the machine knead the dough several times until you get the desired consistency.• Note: Usethe 'Kneading' function by itself, rather than the 'Quick Noodle, Knead, and Auto Extrude" routine because 4 minutes of kneading is not enough: the mixture must have the correct consistency.• Cut the extruding noodles as they emerge. Pasta needs to be kneaded
I bought this hoping that it would be an easy way to produce homemade macaroni. As with a lot of reviews-this product is not easy to use. Most helpful was insights of Phx85021. Find her review and read it if you purchase this machine it will save you a lot of aggravation.I had a hard time with calling what is produced from this machine pasta-using any recipe that had water. I switched to oil and egg only-and that had a better taste-but the mouth feel is ALL WRONG-with or without water. This "pasta" is more like a pierogi or spatzael-very chewy, and very doughy.It IS very tricky to get the precise consistency that the extruder portion works with as well, but with some trial and error you can get something that works.Again, Phx85021 hit the nail on the head with the failure of this machine's kneading ability. It doesn't scrape the sides evenly, nor blend evenly-no matter how delicately you pour your liquid in.But the final nail in this machine's coffin isn't so much the machine's fault as it is the nature of pasta. You will only get that lovely, delicate mouth feel with pasta dough that has been kneaded-I think the gluten has to be activated to give the pasta that smooth silky chew.Bottom line, if you're just looking for a fairly healthy, but heavy carb to add to a meal, and you don't care about how it looks-I guess this will work, but if you love "Little Italy" hand made pasta-even the Pope could not make it in this machine.Good Luck!!!

Easy to Use - Good product
After returning a few different versions we like this one with automatic grinding. It doesn’t cut the length (you do that by hand) but has numerous shapes and levels of flatness. My 14 year old loves and uses it often. Easy to use with just egg and flour.

Took a few tries before got it
The direction book is not the most clear. Never made my own pasta before so that got to be a bit frustrating with lack of clear directions on how to use the machine to ensure I didn't break it. Took a few tries but got the hang of using machine. Kids would rather eat pasta made at home over store bought now, yay! Can use flour and water to make noodles or flour egg & water or flour oil & water. Easy enough to clean. Makes different pastas for different moods. From adding ingredients to boiling noodles takes about 20-25 minutes.

Great pasta, annoying clean-up
We use this pasta maker nearly every day. We love being able to make our own pasta. It’s very easy to use. However, the machine shuts off while extruding the pasta, and starts working again after hitting the side of it. When it stops extruding, it messes up the timing if the entire dish. It also requires being extruded twice. Overall, we still love it.Update: It broke. We haven’t had it very long, and two of the plastic parts broke while we were using it.

Does not work
I ordered this and followed all the instructions. The mixer does not mix all the flour, the extruder did not work. I tried to watch videos to help me use it, nothing helped. One of the plastic pieces ended up breaking off so I wasn’t even able to return it. Do not buy, waste of money.

Best little pasta machine
This machine is the boss. All went great and we enjoyed my Italian grandmother's sauce with Italian sausage and meatballs and penne pasta made with pasta maker. I have had two machine and this one is the best. Also was easy to clean, easy to use and the taste was right on.

Grandkids love! Need easier instructions!
Grandkids love making pasta with me now! They can’t believe you can make pasta with flour, egg and a little water! The only thing is that I’d have someone who’s English is NOT their second language write the instructions as it’s way more confusing then it needs to be!
