Tell them you need NEEDLE STICK PROTECTION solidly up to your elbows. Do not purchase any other HexArmor gloves for this purpose, those will NOT provide the protection you need. A hospital bill for a rattlesnake bite can easily run $150,000-

I use mine for pulled pork. Not sure what sugar work is.

These gloves are for use with non-acidic chemicals. They are not puncture resistant. They would not be recommended for protection against cat claws or teeth.

Large might be ok for you. These gloves are very sticky at first. You may want to try a leather glove for your job.
