Q: Ive herd that you shouldn't run the Samson Dehydrator more that 24 hours at a time, because it needs a rest is this true ??

Yes in the manual it states - "ATTENTION! Do not run the appliance for more than 24hours in one single use. After 24 hours. Unplug and let it cool down for at least 2 hours before operating again."

Q: Is the steel plated at all, or is it pure stainless?

From what I can tell the racks are made of 304 grade stainless steel. The drip tray on the bottom is made of plastic, as are the provided mats for small/runny items. The walls of the interior are made of galvanized steel. The door is glass. The computer board has plastic components, and it is exposed to the interior, so not encased in stainless steel. When I inquired about the interior from customer service, they said the interior is made of galvanized steel "like most ovens." My understanding is that most ovens are actually made from stainless steel or porcelain, and that galvanized steel may not be a healthy option. Still researching, though. If anyone knows of a truly stainless steel dehydrator, please provide the name!!!

Q: How many pounds of meat will it hold for jerky?

It really depends on a few factors, like how thick you slice you meat, but each tray is designed to hold up to one pound of product.
