I can finally have a piece of cake!
I am a T2 diabetic and I haven't had cake in quite a while. I decided to try this mix to make a birthday cake and I was pleasantly surprised at how good it was! My glucose didn't spike! I can't wait to try the other mixes as well! It is worth the cost to me so I can have a treat now and then. I made an 8 inch round, cut it in half, filled the middle with sugar free chocolate pudding, and made an icing with sugar free pudding mix and whipping cream. Not low calorie but delicious!

Mix made really good cupcakes, I wanted white cake so I used all egg whites instead of the whole egg. for icing used butter, powdered, splendid, and vanilla.

Super fluffy cupcakes, great texture
Purchased this mix on a whim to make some more carb and gluten free cupcakes for a potluck. I've been eating sugar free for about ten years and I don't like things that are sweetened with alternative sweeteners that taste overwhelmingly sweet. This mix was perfect. The cupcakes rose really nicely and were so light and fluffy. Not at all like mixes made with nut flour. The flavor was very mild, but I was okay with that. I made some frosting from butter, cream cheese, vanilla, and allulose and they were just amazing. I have co-worker who doesn't do dairy, so I made a sugar free berry compote and cut out the centers of three of the cupcakes and filled them with berries. Both frosted and berry filled got rave reviews from my gluten free/sugar free eating colleagues.Note that this mix is very high in fiber, so if your digestive system is not accustomed to that, you're going to get some gas if you go overboard on eating these.

I LOVE these cupcakes. Great taste and texture for being keto friendly! Just wish some keto items were more affordable. I do plan on buying more from scotty's.

Fluffy,not very cake like but ok
Ok maybe I shouldn’t make this review yet.the cakes are baked I made two small 8x8 round out of this mix .its interesting .Thats for sure .it had pretty good reviews .And king Arther keto was not available to me (that’s my favorite) so I chose this .a little disappointing,because it’s my bday cake .Idk how I feel about it .it fluffed up .But it doesn’t seem like cake .Its just ok .Definitely will not buy again(I had to come back and add some more info ) update ::after ganache and filling i actually loved the texture .It felt biscuit like ? Hard to explain .i think in hindsight.I would have beat the egg whites ,added in egg yolks then added dry ingredients..Because the dry mix was so powdery fine .I feel like it would have made for an excellent sponge cake .If I find it on sale I might give it another try .

More like bread than cake.
I am a huge fan of cupcakes, so when I tell you that I took 2 bites of these and tossed it in the bin, that’s saying something. I’ve got a few un-frosted “cupcakes” that I’m going to try with some strawberries and whipped cream in hopes of salvaging some of this batch as shortcake bases. Overall, very easy to make and make quite a bit for the pouch size. The cupcakes puff up at baking and look quite pretty - but flavor-wise these are problematic. They aren’t sweet (honestly they taste kind of stale - my kiddo described them as “dusty tasting”) and the texture is very, very dry. Very bread-like. If you’re into fairy bread, this would be quite good for that. But if you’re expecting cake? This is probably not going to be it for you.

Light and fluffy!
Excellent for low-carb folks. I skip the muffin tins and bake them in an 8x8 square pan. Add a few fresh raspberries or blueberries for just a little variation. They really hit the spot--moist and fluffy, and I didn't think they even needed frosting.
