What is the benefit of having a thicker (1/2") vs thinner (1/4") steel stone?

I ended up buying the 3/8" which I think gives you the best of both worlds.  The 1/4" is a bit too thin and the 1/2" is insanely heavy (IMO).  Heat retention does matter unless you're only doing one pizza at a time - ever - which isn't likely IMO.  For that matter, even making one pizza, heat retention can be an issue which is why Tony Gemignani recommends using two pizza steels to replicate a wood-fired pizza oven (in the Pizza Bible).

Question 2

I would like to purchase this but it can not be shipped to Hawaii.  Any reason for that?

Hi Tutu,     We would like to ship them to Hawaii, but the cost is way too much--off the charts to be more accurate.  Although some customers might pay the shipping, we are then at risk if UPS or FedEx damages the shipment because we would then have to ship another for free, with the money to do so coming out of pocket.       Another difficulty is with Amazon's shipping template.  When vendors set this up, they set it with a per-pound shipping cost.  While there are some allowances for expedited and 2-day shipping, there is nothing to set Hawaii and Alaska apart from the rest of the country when setting up how much to charge for shipping or to separate one product's shipping model from another.       What makes this strange is, oddly enough, exactly what has you asking why we don't ship to Hawaii: they allow me to exclude shipping to HI and AK, but they don't allot for shipping there when determining my shipping costs.  If we were to allow shipping to HI and AK, and try to price it into our model, we would end up getting a lot of orders from there, but many of them would be to remote parts of the states (especially Alaska) that are exceptionally expensive to ship to.       For the same reason, we do not ship to Canada--we'd love to have Montreal, Toronto, etc., but when we try to price everything in, orders immediately come in from the Yukon Territory where we might lose $100 on shipping per order (not an exaggeration).       When we use to sell only our 4-piece stone set, we had a lot of customers from Hawaii and Alaska because the Post Office had a one price Flat Rate Priority Shipping price that shipped to AK & HI for the same price as down the street, so long as what we were shipping fit in the box.  We had to drop that when we added other products, because the new products didn't fit in those boxes and Amazon's shipping pricing model didn't allow us to price shipping one a per product basis, but instead only on all our products at one price.  I'm sorry we can't ship there, but the circumstances just don't permit it.  Thank you for your interest in our product.Joe

We had a house fire (unrelated to oven) and after forgetting about it the steel rusted.  What's the best way to make it useable again, if possible?

Wow.  I'm sorry to hear that.  I hope everything turns out all right.       For the steel, you may take a steel cup brush (do not use anything harder than steel like carbide.  These will scratch the steel and ruin the surface.  Cup brushes are available at hardware stores or on Amazon. Run the drill forward and brush the entire area of the steel.  Running it in only the places of rust will leave an uneven finish, so do the entire sheet.  Then run the drill in reverse and cover the entire sheet again.  Run the drill both ways on both sides of the steel.  When finished, you will see tiny swirls, but these won't look bad once you have seasoned*.     Next, place the steel in cold soap and water and wash with a kitchen brush.  This will remove any tiny metal flecks you created with the cup brush.  You may blast the steel with an air hose first if you wish but this isn't necessary.  After washing, dry the steel immediately or it will start to rust again.  Also, since you used cold water, condensation may start to form if you are in a humid environment.     When your steel is dry, please grease it immediately.  You may use any vegetable oil-we use olive oil.  You need only a tiny bit of oil, so rub the oil in completely with a paper towel.  Your paper towel may come away orange from rust that is trying to form, but the oil will stop it immediately.  If may come away a little black too.  This will be from the remnants of the first coat of seasoning that we burned on.  Neither of these are a problem.     Place the sheet in the oven and heat until warm, only about 100 degrees and still cool enough to handle.  Then rub in some more oil and wipe completely with a paper towel.  Remember also to rub oil on the sides as rust will form there too.     Now, cook the sheet at between 450 and 500 degrees for about an hour. WARNING-THIS IS GOING TO STINK.  Olive oil smells acrid, flaxseed oil like fish and all others are unpleasant too.  Keeping the film thin, however, will minimize the trouble you have with this.  I would open the windows to vent the air a bit.       Once the smoke stops, your sheet is ready, but DO NOT TOUCH it.  Steel will transfer its heat much quicker than stones and you will be burned even if you have a hot pot holder.  Allow the steel to cool before you remove it.  The result will be a nice film that will look almost like urethane.  There may be oven rack lines on one side, but this won't hurt anything and your sheet will be completely protected. Joe*If you want to eliminate the tiny swirls, you will need to find someone with a large, usually 5-inch steel wire cup brush.  It will have a 5-horsepower angle grinder behind it.  This would be someone at a metal shop.  This is probably unnecessary and also you don't know what else they've ground with these, so I'd probably skip this step.  We do this but our large brushes only ever touch our steel.

Question 4

Is carbon steel the same grade as the "recycled" steel used in competing steel baking sheets such as those from baking steel.com?

I think the terms refer to different aspects of the steel. That is, neither term tell you anything about the "grade" of the steel. Usually something is labeled as "carbon" steel to give you a warning that it will rust in the presence of moisture. I'm assuming "recycled" steel means exactly that, that it has been made from steel that was something else in its previous life.
