I don’t use this every day because I try not to eat much bread. But this is the only flour I will use to make bread. Lovely texture and nutty like flavor.

Great flavor
This flour is wonderful. It doesn’t act like white flour in recipes and I haven’t really learned how to deal with that but it sure makes tasty gravy!

Makes for small and dense bread
I had high hopes but bread didn't rose well like my other organic flour.

Performs well and tastes wonderfully. Highly recommend it. If you don't purchse the cookbook remember to add 5% more liquid that what conventional recipes call for.

Continued flour beetles and had a bad odor.
I received this product (which had not exceeded its "use by date"), opened it and poured it into my sifter. While sifting to make bread, I noticed black specks. I picked some out of the flour and noticed they moved! The flour also had a bad smell. The county extension service notes each female beetle can lay a thousand eggs and that they can contaminate many grain products and can be hard to get rid of. Delayed my whole bread-making process. Threw out all the flour, decontamination surfaces and sink. Placed equipment in the oven at 200 degrees for an hour to kill any remaining beetle eggs. Very unpleasant experience.

Enjoyed using a new flour
As a yeast bread maker for many years, I wanted to try einkorn. It has a lighter crumb and you need to make sure you add enough flour to get a sturdier loaf. The baked crust has almost a cracker consistency and falls apart easily if you don't use enough flour. I used both the whole grain and unbleached versions of einkorn. The unbleached tended to be gummier in the mouth when baked as a yeast bread. In my experience, I think this flour works best in non-yeast breads--light and delicate and sweet. LIke any new flour or bread recipe you'll need to experiment with it a few times and adjust to make it like you like it. My gluten intolerant friend has no trouble eating breads made with einkorn so its a great option.

Delicious nutty flavor
I make my own bread from scratch with no yeast and I was looking for low gluten flour. I really like the taste of this grain. Would recommend.
