Q: What size (mm) are the holes in the three discs with this food mill/mouli?

The finest are 2mm, medium are 3mm and coarsest are 5mm. I use the 3mm disc most frequently because I process a lot of tomatoes, chillies and peppers to make roasted passata with some texture. Most of the seeds are retained in the disc and all of the skins. These I then desiccate and grind them into a spice powder for cooking. Absolutely no waste and skin-free sauces. I also use the mouli for other things but this is my number one use.

Q: Why did they they show a video that did not demonstrate hoe the food mill works? Instead they showed something unrelated.

I don’t know the answer to that, all I can say is that the mouli mill is very good. I use it for making pasta sauces and passata before pasteurising for winter storage. I wouldn’t be without it. It has three grades of coarseness for choice over smoothness of resultant purée. No need to seive out pips or skins or herb stalks. They get caught in mill. I also dry all the ‘waste skins, pips, herbs, garlic’ etc and put in coffee grinder to make flavourful seasoning. Absolutely no waste.

Q: Would this be any good for making puree or pesto out of leaves like spinach etc (cooked or uncooked)?

I imagine so. I've used it for things like peapod soup and gooseberry puree / fool where you deliberately want to leave behind the strings, stalks etc. But if you used it for something smooth like potato for mashing, or cooked spinach, I would imagine it would puree well without leaving anything behind, (but I've not tried that).

Q: What is the diameter of this? And also what is the capacity?

20 cm internal diameter, capacity as explained to another person depends on its use. The food rises around the edge so I usually just put two or three large scoops of mix in at a time. It’s very efficient. I make smooth passata and rougher textured pasta sauces.
