Q: Can you use these mats to knead and work with raw dough?

Q: what about using silpat mat for pizza and bread making which typically use temperatures around 500 to 550 degrees?

I made pizza and baguettes on silpat (not silpain) and it was great. No parchment, no stone. Needed temps are not 500-550 F, but rather 250-260 C = 480-500 F I believe. I preheat oven to 575 F. By the time I put the baguettes in and deal with the steam, opening the door twice, the temp goes down 100 F very fast and slowly gets back up to 500 F which is enough time for the baguettes (15min) and not much of a stretch for the mat (480F)

Q: Has anyone tried the silpain with roasted vegetables? i already own the silpat and i like it, but roasted vegetables don't get crispy enough for me.

No, a Silpat is thick and insulates the pan. If you want to roast vegetables without them sticking use parchment paper which is thinner and designed to allow browning.
