Leicester is a dryer cheese than your average cheddar and it has little crystals as a by-product of the aging that give it a satisfying crunchy texture that I can't get enough of. I've yet to purchase it from Amazon, but I often pick it up from my local grocer. 5lbs. might be a bit much for me and my family to eat before it starts to mold, but if you're having a party and want one of the best cheeses available at a fair price, then you can't go wrong. In fact, it is so rich and savory, a little piece goes a long way. Paired with crackers and perhaps a slice of olive, it is a perfect hors d'oeuvre. Once you try Red Fox it is hard to go back to regular sharp or extra sharp cheddar.~ Kort
