Awesome results every time
This is the best long grain risotto rice I have ever used.. price is obviously high compared to what most are accustomed to but honestly no one is going to age a food product in Italy for 7 years without adding a decent amount to the end price, and with this I actually felt like I got what I paid for as the texture is awesome every time i make risotto with it,.. witch is kinda impressive since I'm not a perfect cook and this is a longer grain rice as opposed to Nano variety which is usually what i resort to using when I need to prepare a very tender risotto.

Pricey but worth is for those that can appreciate
Just made a saffron risotto with this product last evening. Risotto is a staple dish in our house that I make at least once per week so I used this product instead of my usual rice. For me it is clearly a superior product then any other risotto I have ever used. I didn't tell my family that I was using a different rice and I asked them how it was and they indicated that it was good always. For me the texture and taste were clearly superior but those elements fell on deaf palates within my house. Being a fairly frugal individual, at $13 lb. versus the Beretta Aborio rice I get for around $2.25 lb. it is tough to swallow, pun intended. In conclusion, I will likely continue to purchase this product and save it for when we have foodie guests over that can better appreciate it or when I'm just cooking for myself and will continue to use the cheap stuff for the weekly family dinners.

Best quality on the market
I am a huge fan of risotto and recently started cooking it at home. I was looking for a perfect rice on the market and last year found this one. It’s easy to cook with: does have a nice taste, absorb liquid and not getting mushy. My family and friends are amazed with the taste of my risotto, it’s just the best I ve ever tried!

The BEST rice for risotto
When I first started making risotto decades ago, I used Arborio rice. It's good. Through the years and trying different rices, I came to prefer Carnaroli for risotto. If you have the opportunity to buy Acquerello and love risotto, It's terrific. It is now all I buy and cook with for risotto. Absorbs broth beautifully, makes a creamy risotto. It's our favorite comfort food. Just made some last night with homemade chicken broth, Italian herbs and sun-dried tomatoes. Stirred in some grated Parmesan at the end and topped with browned chicken sausage. Delightful. I used 1/2 a cup of rice for two servings and about 2 2/3 cups broth. Thanks Acquerello.

Meh
I'm an Arborio fanatic. I bought this Acquerello because I had the rice in a Michellin Star restaurant and loved it. I'm an excellent risotto chef, so I know it's not my technique if the output is wanting. After cooking all this Acquerello, I cannot say it made any difference at all in my meals. Side-by-side, my Arborios are "similar" so there is no way I can justify paying the price for this rice. As a result, I give it a "meh" and won't buy it again.

little difference from cheaper options
I've been making risotto for decades and for the rice I usually go for whatever arborio or carnaroli looks best at local grocery stores. This is significantly more expensive than anything I've seen before but I wasn't able to really discern any difference in taste or texture from other high quality (but much cheaper) rices.

Best rice for risotto.
I have been trying to cook risotto before with Arborio…. Not bad but this rice is the king of rices for risotto. I cooked some today. Delicious. Highly recommend!

I give the 7-year-aged product the same five-star rating as the 1-year product because, to me, the results are equally praiseworthy in the extreme. I must admit, though, that even with my palate I was not able to discern a difference between the results. I will, in future, perform a side-by-side comparison of two preparations identical except for the 1-year versus 7-year product, and post an update if my opinion changes.
