Hi, Considering that my 13 year old female German Shepherd has done well with the 2 or 3 cubes that I have been giving her daily, I recommend giving your little Chihuahua a quarter cube. You can monitor how she responds to this amount after a week and adjust accordingly.

How long do they keep unrefrigerated?

you do not refrigerate these. Mine keep for at least 2 months. I'm sure they last longer especially in a Ziploc bag.
