What grade of steel is this made of? Is it 304?

Likely. Definitely not 316, as the material cost would be significantly higher. Chinese stainless is ambiguous for alloy type, suppliers I have experience with will mark the raw material with whatever the customer requests.... as a courtesy. I have been a Welder for 33 years.

Yes, when the latches are employed it is totally sealed. Your onion odor will be trapped inside until you choose to open it.

How many hours can it keep food warm?

It’s not insulated so not long. It’s a great quality lunch box though. We engraved ours for the kids.
