Disappointing - yet another Japanese grill book... and not a good one.
Disappointing. As a fan of robata grill restaurants, I was expecting a little insight into their methods and style. I was hoping for a little bit more technical discussion of the ups, downs, hows, and how-nots of small plate grill dishes. Instead I got a few pages of the how - with bodged-together equipment - and a ton of pages of pretty-standard recipes... those with very little discussion of their roots. It shows how to cook with pressed bincho-ish charcoal - not real binchotan... which is widely available everywhere now. The discussion of the grills never really gets into how procure or identify a proper konro or hibachi. I never poo-poo books like this... but this one, which I pre-ordered on its description, disappointed me greatly. If you have no other books like this, it might be a good book to have... though it’s missing many steps in grill setup. If you’re looking for something a bit more high-end, or a good step-by-step guide, skip it.

Beautiful book of unauthentic recipes
The book is beautifully photographed and well organized, but the author only spent a couple of months in Japan and everything in the book are her interpretations of the classic recipes. I wouldn’t recommend this book if you’re familiar with the cuisine and looking to cook traditional recipes.
